TRAVELLING CHEF DE PARTIE FOR HIGH PROFILE FAMILY

An exciting opportunity has arisen for a driven, passionate and discrete Chef de Partie/Junior Sous Chef to support a high profile family at their various residences across the UK. This role will play an integral part in supporting the Head Chef and Sous Chef across the family’s residences, travelling with them regularly. You will be responsible for providing meals for household staff, catering for large scale events, as well as providing meals for members of the family on occasion. You will assist with the preparation and production of meals and dishes to the highest standards, whilst utilising seasonal produce within the budget and ensuring menus are well balanced, nutritional and sustainably sourced. You will be a team player, with a supportive and flexible attitude, and a tactful, discrete and courteous demeanour.

Working hours are Monday-Friday, 45 hours per week, including some weekends on a rotational basis. You will predominantly be based out of the London residence, with travel throughout the UK and between residences required for approximately four to five months of the year. For this reason, this role could suit an individual based either in London, Scotland or Wales.

DUTIES TO INCLUDE, BUT NOT BE LIMITED TO:
• Assist with the preparation and production of meals for household staff, events and functions to the highest of standards.
• Utilising seasonal produce within the budget and ensuring menus are well balanced, nutritional and sustainably sourced.
• Assist in ordering of ingredients, taking into account sustainable policies on produce and ensuring good value for money.
• Establish and maintain strong relationships with suppliers.
• Ensure stock rotation and minimal food waste.
• Receive and check deliveries on a daily basis, reporting any irregularities to the Head Chef/Chef in Charge.
• Travel to and operate from other residences in the UK and occasionally overseas.
• Maintenance of all kitchen areas and equipment in accordance with hygiene regulations.
• Fully compliant with Health and Safety procedures.
• Any other duties required as requested by the House Manager or Head Chef/Chef in Charge.
• Ensure regular and constructive communication is maintained within the kitchens of all residences across the UK and when travelling.

ESSENTIAL CRITERIA
• Experience as a Chef de Partie in a professional establishment.
• Recognised qualification from a cookery school or college.
• Pride and passion for the culinary industry.
• A good understanding and working knowledge of organic produce and ethos, or an interest to learn more.
• Experience in catering according to allergen regulations and catering for other alternative dietary requirements.
• Ability to prepare food from base ingredients.
• Previous experience in volume catering.
• Experience in menu planning.
• Proven ability of working to a tight schedule and in a clean, tidy and organised way.
• Relevant and up to date health and hygiene qualifications and practical experience in operating within a kitchen with the highest hygiene standards.
• Excellent communication skills.
• Proven experience of working effectively within a team, with a supportive and flexible attitude.
• Effective time management skills with the ability to prioritise and manage competing deadlines, and to remain calm when under pressure.
• Flexibility with working hours, as this role involves working evenings and weekends.
• Willingness and ability to travel to and work from other residences across the UK.
• Tactful and courteous with the ability to maintain confidentiality and discretion at all times.
• Eligibility to live and work in the UK
