TRAVELLING SOUS CHEF FOR HIGH PROFILE FAMILY

We have a career-defining opportunity for an experienced, passionate and discrete Sous Chef to support a high profile family at their various residences across the UK. This role will play an integral part in the hospitality and catering department of this high profile household, catering for distinguished large scale and intimate events.

Reporting directly to the Head Chef, you will be responsible for the day-to-day preparation, cooking and presentation of dishes for the principals, their guests, as well as household staff, to the highest of standards. Deputising for the Head Chef by taking charge of all kitchen operations when required, this role seeks a confident Sous Chef, ready to hit the ground running and step up when needed.

With strong staff and kitchen management requirements, as well as exhibiting exceptional culinary skills, you should be proficient in all four sections of the kitchen: larder, veg, sauce and pastry. You should have a passion for creating beautifully presented meals using seasonal, sustainably sourced, organic ingredients. The successful candidate will have experience in menu planning and be able to cater to a variety of dietary requirements. Strong leadership skills are essential to this role, as you will be assisting with the management and mentoring of a large team of junior Chefs.

Working hours are Monday-Friday, 45 hours per week, including some weekends on a rotational basis. You will predominantly be based out of the London residence, with travel throughout the UK and between residences required for approximately four to five months of the year. For this reason, this role could suit an individual based either in London, Scotland or Wales.

DUTIES TO INCLUDE, BUT NOT BE LIMITED TO:
• Preparing beautifully presented, organic and sustainably sourced meals in accordance with the Principal’s tastes.
• Assisting the Head Chef with sourcing high quality, locally sourced, seasonal and organic ingredients.
• Supervision of meal preparation for Principals, staff and events of functions.
• Ensuring the highest standards of kitchen management and operations are maintained across all UK residences.
• Assisting the Head Chef in the planning and preparation of menus in line with dietary requirements and the Principals’ preferences.
• Maintaining strict hygiene protocols, particularly in the preparation of sensitive commodities and allergens.
• Planning and coordinating overseas tours with the Head Chef.
• Maintaining good relationships with suppliers and suggesting alternatives to the Head Chef where required.
• Marking up of invoices.
• Kitchen and equipment maintenance.
• Instruct and supervise junior members of the team in their daily tasks and assist them in preparation.
• Fully compliant with Health and Safety procedures and Hygiene Regulations.

ESSENTIAL CRITERIA:
• Possess a City and Guilds catering qualification (or equivalent experience).
• Up-to-date food hygiene qualifications.
• Substantial experience gained within a 5-star or UHNW environment, most recently at a Junior Sous or Sous chef level.
• Proficient in all four sections of the kitchen: Larder, Veg., Sauce and Pastry.
• Working knowledge sourcing and preparing organic, locally sourced and sustainable food.
• Experienced in menu planning and development.
• Strong leadership and people management skills with the ability to encourage and develop a team.
• Excellent communication, planning and organisation skills.
• Proactive and able to use initiative.
• Possess pride and a passion for the industry.
• Positive and flexible attitude with a hands-on, practical approach to management.
• Tactful and courteous with the ability to maintain confidentiality and discretion at all times.
• Proven experience in working well and effectively with a wide range of people in a multi-disciplinary team.
• Good time management skills with the ability to prioritise and manage competing deadlines, and to remain calm when under pressure.
• Flexible, willing and able to travel within the UK for long periods of time.
• Full, clean UK driving license.
• Eligibility to live and work in the UK.
• Excellent checkable references.
